Dr. Biggles is one of my favorite food writers. He’s not prolific and keeps his topics to mostly meat. I guess that makes sense as his food blog is called Meathenge. Was poking around the fridge early this afternoon, searching for something tasty for lunch. I ran out of lunch-meat the other day, the leftover spaghetti was only 3 mouthfuls worth, I dunno I just couldn’t pull anything together. 30 minutes went by and I remembered an unused pound of ground beef in the fridge, hidden down in the vegetable crisper. Hidden Meat. On went the SRG with a load of hickory chips ready to grill. In 15 minutes the 1 pounder was on the grill and on its way. Dump with cheesy love, large cover to help accelerate the melt action. Sliver of lettuce was installed for contrast.
