"HOT Cha-Cha Chipotle Burgers"

Worcestershire sauce, liquid smoke, and Tabasco Chipotle sauce all add a zing to these Chipotle Burgers.

Ingredients

  • 2 lbs ground beef
  • 3 tablespoons crushed garlic, or to taste
  • 4 tablespoons Worcestershire sauce
  • Steak seasoning, to taste
  • Tabasco Chipotle sauce, to taste
  • Condiments of your choice

Instructions

  1. Prepare your grill for direct heat cooking.
  2. Preheat your grill to medium heat (350F - 400F degrees).
  3. Add wood chips to smoker box on the grates above direct heat, or however you normally set up for smoke flavoring and get it started prior to grilling.
  4. In a large bowl mix meat together with seasonings. 
  5. Hand form 4 meat balls and flatten them into patties, a bit concave in the center.
  6. Place these into the fridge to give seasonings time to "get happy."  
  7. Here's a tip from CB: burgers are best grilled right out of the fridge, they hold together better!
  8. Remove the burger patties from the fridge just prior to grilling, season the surface of the patties with a pinch of coarse salt and pepper, then spritz the surface of the meat patties with canola or other high heat oil before placing them on clean grates.
  9. "Where they hit - they sit!"
  10. Don't press on them and don't move around. Let the grill and the heat do it's job without interference!
  11. If they are not ready they will stick to the grill and flipping them will tear them up. When the proteins have cooked properly they "align" and release making it easy to flip.
  12. Splash additional HOT Chipotle sauce on them when you flip them?if your personal heat meter can take it!
  13. USDA recommends ground beef be cooked to 160F degrees internal temperature.
  14. Note: I use a spray bottle filled with a Worcestershire sauce and liquid smoke mix that keeps things moist and adds tons of flavors (Mix is 3 parts Worcestershire with 1 part liquid smoke).
