Grilled Greens!

When guests join us at the table for a meal – they generally expect to be served something tasty. and for the most part their expectations are met. I can kinda-sorta cook pretty good and Miss Laura is a most excellent cook. We invited friend to a dinner party last Saturday and I promised all the courses would either be solely prepared on the grill or would contain at least one ingredient that was grilled. When I said I’d be serving Caesar salad – I think they were puzzled. I knew they were when Dave called out: “What can you possibly grill for a Caesar salad — the lettuce?”

Yep.

We had 8 guests so we bought one of those large bags of romaine at the warehouse store.

Cut the lettuce heads in half - drizzled with olive oil. (TIP - after rinsing, dry with thick cotton towel and make sure to leave the base on so the leaves hold together.)

A “Quick Sear” adds a tasty flavor to the leaves and the grill/charred smokiness adds a new dimension of  flavor.

I placed the lightly-oiled leaves on the Medium (about 375F degrees) hot grates for about 30 seconds or so, removed and plated...

Cut the lettuce heads in half – drizzled with olive oil – quickly seared on Medium Heat (about 375F degrees) and plated —- drizzled our special secret Caeser dressing over and topped with Miss Laura’s home-made cheesy croutons.

Miss Laura drizzled her special secret Caeser dressing on it and home-made cheesey croutons. The presentation was impressive. Each guest received one half and the option was to pick it up and eat it like a cook-out or use a knife and fork. It was Tasty on a Plate! to be sure.

Caveat: For the dinner party we served the grilled halves – but last night Miss Laura asked me to grill the halves and she chopped them for her shrimp salad….saying: “Mister – you are gonna be grilling a lot of lettuce this summer…I like it!”

    • The truth is…she got it from me! I learned it from a maitre’d I worked for in the late 70′s, Walter Walter Brachmanski. It’s a classic style. Will publish later this month, how’s that? ~ Barry ‘CB’ Martin

      • I’d like to have it too! Good for a diet or someone trying to eat salad not 12 pound butt steaks?

  2. Bummer…I would make the salad tonight, BUT without the dressing NOW it just won’t make the grade.

  4. Love greens alot, looking forward to trying it on the grill. Can’t wait to see the Caesar Salad Dressing receipe, thank you. I have just gotten the Big Easy and love it! I’am going to try the Ribs next on the hooks. Have done the Turkey! and a Pork Roast! excellent.

  5. How unique. My wife is dubious so I will have to make it sometime she is gone or convince her it is worth a try.

  6. My family has been grilling Caesar salad for years. We always add some freshly shaved parmesan.

  7. Once you try this (and we have many times this summer), I don’t know how you could go back to non-grilled romaine…delish!
